Real Easy Weekdays! Blueberry Banana Baked Oatmeal


This Blueberry Banana Baked Oatmeal is easy to make and perfect for a quick, healthy breakfast throughout the week. Simply reheat and enjoy. Check out the recipe below!


Ingredients

2 1/2 cups large flake oats

1 tsp cinnamon

1 tsp baking powder

1/2 tsp salt

2 tbsp ground flax (optional)

2 cups milk (your choice)

1/3 cup maple syrup

2 eggs (lightly beaten)

2 tbsp butter (melted)

2 large, ripe bananas (chopped coarsely or mashed)

2 cups fresh or frozen blueberries

1/2 cup chopped pecans


Instructions

  1. Preheat oven to 375 degrees F. Grease a 9 x 9 baking dish.

  2. In a medium bowl, combine the oats, cinnamon, baking powder, salt, and ground flax.

  3. In a smaller bowl, mix milk, maple syrup, eggs, butter, and bananas until combined.

  4. Add banana mixture to oat mixture and stir until well combined.

  5. Fold in the blueberries.

  6. Let mixture sit for 5 to 10 minutes for some of the liquid to absorb.

  7. Pour into greased baking dish and top with chopped pecans.

  8. Feel free to reserve some extra berries or banana slices to put on top.

  9. Bake for 40 to 45 minutes or until top is nicely browned.

  10. Let cool slightly before slicing and serving. Optional: serve with vanilla greek yogurt and more fruit!

  11. Leftovers keep in the fridge for approximately 4 to 5 days.

  12. Enjoy cold or warm. Simply reheat in microwave.
